Chilaca peppers, also known as Pasilla Negro, Chile Negro, Chile Pasilla, Morilla, or Pasilla Bajio, are mild, rich-flavored peppers. The gentle, full-bodied flavor makes it ideal for tasty enchilada sauces. This is the pepper of choice (once dried and ground into a powder) for the famous Mexican mole (mo-lay) sauce. When dried, they are known as Pasilla peppers.
Starting off dark green, these peppers matures to a dark brown. The narrow Chilaca can measure up to 8 – 10 inches in length and often has a twisted or curvy shape.
