Growing to 5-7 inches in length, the NuMex Barker’s Hot Pepper is one of the hotter of the Anaheim/New Mexico varieties. This heirloom chile blends good flavor with moderate heat. Many people refer to Barker’s Hot as a hot Anaheim; use it as you would Anaheim chiles.
Green fruits ripen to bright red; heat increases as peppers become redder.
CULINARY USES: The fruits have thin skins, making them great for roasting, frying whole, canning or stuffing. They also make deliciously hot salsa.
